Blueberry Watermelon Feta Mint Salad

 

For many of us summertime is filled with BBQ’s, potlucks, and gatherings! I don’t know about you, but I’m often searching for recipes that not only impress those tasting it, but are not likely to be duplicated by another guest. I love having the opportunity to try something new at a potluck, it can be the best place to find new recipes, and is exactly where I learned about a recipe I’ve put my own little spin on.

With the upcoming blast of summer weather, this weekend and upcoming week will be full of patio meals, picnics in the park, and camping!  So when we received 10 lbs. of organic, no-spray, fresh, local blueberries I knew I needed to come up with an easy recipe for a shareable dish: Blueberry Watermelon Feta Mint Salad! I know, the combination may sound a little intimidating, but let me assure you, it’s delish and definitely worth a try!

 

 

Blueberry Watermelon Feta Mint Salad
8 servings | prep time: 15 minutes

 

Ingredients:

  • 2 ounces olive oil
  • 1 ounce balsamic vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup finely diced red onion
  • 8 cups diced watermelon
  • 2 cups fresh local blueberries
  • 1/4 cup rough chopped fresh mint leaves
  • 1/2 cup crumbled feta cheese (I’ve added more cause I love me some feta!)

 

Directions:

1. In a large bowl, whisk together olive oil, balsamic vinegar, salt, pepper, and diced red onion

2. Add the diced watermelon, blueberries, mint, and feta cheese to the bowl. Gently toss to coat.

As the salad sits, it waters down slightly by the watermelon. If you’re wanting to prepare the salad ahead of time, I recommend keeping the dressing separate until ready to serve.
